LAMB BUTTERFLIED LEG WITH LAVENDER AND ROSEMARY

Prepare a wood or charcoal fire in a grill. Using a spice or coffee grinder, grind together a few black peppercorns, dried rosemary leaves, and dried lavender blossoms. Rub a butterflied leg of lamb with salt, then the lavender mixture. When coals are ready, rub the grill with olive oil and grill the lamb for 10-15 minutes per side, or until done to your liking.

LAVENDER GRILLED PORK CHOPS

Mix together a little olive oil, dried lavender blossoms and twice as much dried thyme. Rub the chops with this mixture and grill. If desired, toss dried lavender stems on the charcoal for extra flavor.
